Here is another tasty recipe out of Jamaica. This recipe gives you flexibility with how it is prepared – especially with the side dishes. It is a great option for vegetarians as well.
In its most basic preparation – that is without the Maggi and seasonings – many Jamaicans cook turn cornmeal for their pet dogs. Generally, it is combined with chicken back or mackerel.
But this Jamaican Recipe of the Day is nothing to snooze at. It is quite filling. Today, we will give you a more tasty and nutritious option that is well seasoned.

By: Chef Marj Walters
Ingredients:
1-2 lbs of cornmeal
1 pack of coconut milk
1/4 cup of butter
1 pack Maggi chicken noodles
1 can of Lasco mix vegetables
1 small onion (diced)
1 small bell peppers (diced)
1 teaspoon of salt
2 teaspoon powdered seasoning (optional)
Preparation :
Soak cornmeal in water or coconut milk before.
Fill a pot with four cups of water.
Place pot on the stove to boil.
Add in the butter, bell peppers, onions, Maggi chicken noodle or powered seasoning, and mix vegetables.
Boil for 10 – 15 minutes.
Pour in cornmeal, while stirring the ingredients.
Manage the level of the heat, so that the cornmeal does not burn.
Pour in the coconut milk, every 15 minutes and allow to simmer for at least 1 to hours.
Stirring occasionally, mixing the ingredients from top to bottom and allow to simmer.
Serve hot with meat or your choice side dish or protein. This is usually prepared with steam fish or can be had alone.
