Ingredients
- 1 sprig(s) thyme
- 1/2 cup(s) soy sauce
- 1 cup(s) Tomato Ketchup
- 1/2 cup(s) Vegetable Oil
- 4 whole pimento berries
- 1 1/2 tablespoon(s) ginger, grated
- 1 tablespoon(s) raisins
- 1/2 teaspoon(s) scotch bonnet pepper,chopped
- 1 cup(s) hot water
- 1 teaspoon(s) salt
- 1 stalk(s) escallion, chopped
- 8 whole pork chops
- 1 cup(s) orange juice
- 1 medium onion, chopped
Golden Pork Chops Directions
Clean pork chops and season with soy sauce, half the ginger, salt and chopped onion. Cover and allow to marinate in the refrigerator for two hours. Heat vegetable oil in a large skillet and use brown pork chops on each side. Remove pork chops from the skillet and set aside. Drain about half of the oil from the skillet. Return to the flame and sauté the remaining ginger, scotch bonnet pepper, scallion, thyme, and pimento berries. De-glaze the pot with hot water, then return the pork chops to the skillet. Add orange juice and allow to cook until tender. Mix in the Tomato Ketchup and the raisins and simmer for a further 5 minutes. TO SERVE: Serve with slices of Roasted Sweet Potato and a tossed vegetable salad. Garnish with orange slices.*****
