Jamaican Jerk Chicken Being Prepared in Pans

Back home, jerk chicken is a common favorite of many Jamaicans. We even have jerk chicken vendors, selling this island favorite in much of our cities across the island. If you visit Kingston and travel to Half Way Tree or towards Papine, at night your nose will be twitching from the aromas steaming out of the jerk pans.

It is true, the captivating flavors that titillate the taste buds, is simply thrilling when you sample some succulent jerk chicken, jerk pork, jerk sausage, jerk fish or anything thing else you are bold enough to experiment with.

But be careful! If you are not used to spicy food, you might want to have a milder version.

Nonetheless, I highly recommend you try out this Jerk Seasoning recipe, so you can enjoy this awesome dish for yourself.

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 tablespoon diced Scotch Bonnet pepper (you can substitute with habanero pepper)
  • 2 tablespoons of finely chopped escallion
  • 2 teaspoons ground black pepper
  • 2 teaspoons ground allspice
  • 2 1/2 teaspoons dried thyme
  • 2 tablespoons dried minced onion
  • 3 tablespoons of dark/brown sugar (if you are diabetic/high blood sugar do not include)
  • 1/2 teaspoon salt (if you are hypertensive/high blood pressure do not include)
  • 2 tablespoons of finely diced garlic
Jerk Seasoning Ingredients

DIRECTIONS

Get a container and mix your ingredients together – the scallion, dried onion, Scotch Bonnett pepper, thyme, allspice, ground black pepper, cinnamon, pepper, garlic, salt and other seasonings. Coat meat lightly with oil, then rub seasoning onto meat. Use as much as needed to season your meat properly.

Jamaicans generally allow the meat to marinate overnight, if not for a few days. If you leave it overnight, it’s fine to place it in the fridge. If for a few days or longer, put the meat in a freezer.

When it is cooked, you won’t believe how every pore of your meat will be brimming with flavor.

Keep in mind, the seasoning can remain in your fridge for quite some time, so feel free to experiment with larger portions, especially if you plan to have a large family event – like a 4th of July barbeque.

Just wait, your guest will be licking their fingers, rubbing their bellies and asking for more.
