Here is a treat for people with a more vegetarian preference. This Jamaican Recipe of the Day, Veggie Tuna Cracker Salad is quick, easy and tasty.

Jamaican Recipe of the Day: Veggie Tuna Cracker Salad

Ingredients: 

1 bell pepper
1 carrot
1/2 small cabbage
1 head lettuce
1 tomato
1 tin tuna
1 pk Crackers wheat
1 tsp.  Mayonnaise
1 tsp. Vinegar
1/2 tsp sugar
A pinch of white pepper

Preparation :

Thread cabbage, lettuce,  and carrots finely.
Julene bell peppers and tomatoes.
Arrange on a platter with crackers in a side bowl and place flaked tuna with pepper sprinkled.
Add another bowl for dip.
Combine mayo, vinegar,  and sugar.
Slightly whisk until creamy.
Serve with  the vegetables.
It is a great appetizer when chilling with friends and can be served in the evening with tea or coffee. Also great for tea parties, small meetings or gatherings.
